Dijon Chicken

Again, a Taste of Home magazine adaptation.  Some of the family's all-time favorite meal at home since I discovered Dijon Chicken in 1999.  But dijon is an acquired taste, so...

The night of this photograph, dinner was prepared by Miranda the superstar daughter.  Enjoy.

Dijon Chicken

½ c. Dijon mustard
½ c. oil
1 T. black pepper
Up to 6 small chicken breasts

Sauce:
1 small plain yogurt
1 can cream of chicken soup
1 T. Dijon mustard
1 pkg. dry ranch dressing mix
(optional: 1 can sliced olives)

Whisk together Dijon, oil & pepper, and spread over chicken in a casserole dish.  Cover with foil and bake for 45 min. or until juices run clear.  While chicken bakes, combine sauce ingredients in a small pot until very hot.  Serve sauce hot over chicken with potatoes & sour cream.
